Learn how to make your own gluten-free muffin mix at home with just a few simple ingredients.

I stumbled upon a simple recipe for homemade muffin mix recently. Despite having my own tried-and-true recipes (you can check them out at the end of this post), I decided to give this one a shot.

Let me tell you, it was a hit! Both I and my family loved it because every batch I’ve made using this homemade muffin mix gets devoured in no time. That’s a sure sign that this recipe is a keeper and worth sharing.

Since then, I’ve experimented with different flours, both gluten-free and regular, and added various ingredients like apricots, okara (leftover from making homemade vegetable “milk” like rice or soy), rum-soaked grapes, and more, in both muffin and cake forms.

Equipment

  • 1 bowl
  • 1 mixer optional

Ingredients
  

  • 280 g of flour: a mixture with or without gluten or your preferred flour (see note below)
  • 80 to 100 g of sugar I prefer muscovado
  • 1 tbsp baking powder homemade if available
  • ½ tsp of baking soda
  • ½ tsp of sea salt
  • Optional: ¼ tsp of your favorite spice like nutmeg or cinnamon

Instructions
 

  • In a bowl or preserving jar, combine the flour, sugar, baking powder, baking soda, salt, and optional spice.
  • Mix well.
  • Store the muffin mix in a tightly sealed jar in a cool place until ready to use.

Notes:

  • To prepare muffins, you’ll also need eggs (or substitutes), milk (vegetable works fine), oil, and additional ingredients like fruits or nuts.
  • You can adjust the proportions based on your needs.
  • Store the mix in a dry place in sealed containers.
