Red Velvet Cupcakes Recipe

Ingredients

  • 2 cups flour
  • 1 cup sugar
  • 1 –2 tbsp unsweetened cocoa powder
  • 2 eggs
  • ½ cup neutral oil or melted butter
  • ½ cup buttermilk or milk + 1 tsp vinegar
  • 1 tsp plain vinegar
  • 1 tsp vanilla extract
  • A few drops red food coloring optional
  • 1 tsp baking soda or powder
  • Pinch of salt
  • Frosting Ingredients
  • 200 g soft cream cheese
  • 100 g soft butter
  • 1 cup powdered sugar
  • 1 tsp vanilla extract optional

Instructions
 

  • Preheat oven to 175°C and line a muffin tray with paper liners.
  • Mix dry ingredients: flour, cocoa, baking soda, salt.
  • In another bowl, whisk sugar with oil/butter, add eggs one at a time, then vanilla.
  • Gradually add dry mix and buttermilk mixture until smooth. Stir in red coloring if using.
  • Add vinegar and fold gently. Fill liners ¾ full.
  • Bake 18–20 minutes until tops spring back. Cool completely.
  • Beat cream cheese and butter until smooth. Add powdered sugar and vanilla until creamy.
  • Frost cooled cupcakes and enjoy.

Notes

Optional: Add jam inside, natural coloring, or sprinkles for decoration
