buttermilk or milk + 1 tsp vinegar

A few drops red food coloring

soft cream cheese

soft butter

powdered sugar

vanilla extract

Instructions
Preheat oven to 175°C and line a muffin tray with paper liners.
Mix dry ingredients: flour, cocoa, baking soda, salt.
In another bowl, whisk sugar with oil/butter, add eggs one at a time, then vanilla.
Gradually add dry mix and buttermilk mixture until smooth. Stir in red coloring if using.
Add vinegar and fold gently. Fill liners ¾ full.
Bake 18–20 minutes until tops spring back. Cool completely.
Beat cream cheese and butter until smooth. Add powdered sugar and vanilla until creamy.
Frost cooled cupcakes and enjoy.
Notes
Optional: Add jam inside, natural coloring, or sprinkles for decoration
