easy homemade gluten-free muffin mix recipe

Learn how to make your own gluten-free muffin mix at home with just a few simple ingredients.

I stumbled upon a simple recipe for homemade muffin mix recently. Despite having my own tried-and-true recipes (you can check them out at the end of this post), I decided to give this one a shot.

Let me tell you, it was a hit! Both I and my family loved it because every batch I’ve made using this homemade muffin mix gets devoured in no time. That’s a sure sign that this recipe is a keeper and worth sharing.

Since then, I’ve experimented with different flours, both gluten-free and regular, and added various ingredients like apricots, okara (leftover from making homemade vegetable “milk” like rice or soy), rum-soaked grapes, and more, in both muffin and cake forms.

One recipe, endless variations! Below, you’ll find the basic mix recipe for homemade muffins, and I’ll be sharing different muffin and cake variants made with this mix in future posts.

  • ½ tsp of baking soda
  • ½ tsp of sea salt

  • In a bowl or preserving jar, combine the flour, sugar, baking powder, baking soda, salt, and optional spice.
  • Mix well.
  • Store the muffin mix in a tightly sealed jar in a cool place until ready to use.

  • To prepare muffins, you’ll also need eggs (or substitutes), milk (vegetable works fine), oil, and additional ingredients like fruits or nuts.
  • You can adjust the proportions based on your needs.
  • Store the mix in a dry place in sealed containers.

Why use gluten-free ingredients?

So, why bother with gluten-free ingredients? Well, if you or someone you’re cooking for has celiac disease, gluten sensitivity, or wheat allergies, using gluten-free stuff is crucial. See, gluten, found in wheat, barley, and rye, can really mess with these folks’ digestion and health. By going gluten-free, you make sure they can enjoy their food without any nasty side effects. Plus, even if you’re not dealing with any specific conditions, going gluten-free can still be a good choice for better overall health and digestion.

What you can make with this mix?

With homemade gluten-free muffin or cake mix, you have a versatile base that can be used to create a bunch of delicious treats. Here are some ideas including my favorites:

  • Blueberry Muffins: Add fresh or frozen blueberries to the mix for a classic and fruity muffin.
  • Banana Nut Muffins: Mash ripe bananas into the mix and add chopped nuts like walnuts or pecans for a flavorful twist.
  • Lemon Poppy Seed Muffins: Incorporate lemon zest and poppy seeds into the mix for a tangy and aromatic muffin.
  • Apple Cinnamon Muffins: Fold in diced apples and cinnamon into the batter for a cozy and comforting muffin.
  • Pumpkin Spice Muffins: Mix in canned pumpkin puree and pumpkin spice for a seasonal and flavorful muffin option.
  • Chocolate Chip Cookies: Turn the muffin mix into cookie dough by adding chocolate chips and forming them into cookies for a delightful gluten-free treat.
  • Lemon Drizzle Cake: Use the cake mix to bake a zesty lemon drizzle cake by adding lemon zest and a tangy lemon glaze.
  • Carrot Cake Muffins: Incorporate grated carrots, cinnamon, and chopped nuts into the mix to make moist and flavorful carrot cake muffins.
  • Vanilla Cupcakes: Transform the cake mix into fluffy vanilla cupcakes and top them with your favorite frosting for a simple yet delicious dessert.
  • Coffee Cake: Create a gluten-free coffee cake by layering the cake mix with a cinnamon-sugar streusel and topping it with a drizzle of icing.

Wrapping up!
